I use a lot of Quote Calculators for the websites of my clients. Were the price is calculated based on a number of factors (eg. for a taxi service the KM distance). So the price is created on the spot

when you have the amount, you calculate the % that you need to take and pass that as the application_fee_amount

I have one more question
If my clients want to add products on their Stripe Dashboard (which is connected to my account via Stripe Connect), how can I set-up an application fee for products created by clients?

you can't really
if they charge directly from their account, you wouldn't have any control over it
but this really depends on which type of Connect Account they have
