We don't really support the concept of a "fulfillment date" as a parameter in our API. So metadata would be the correct place to put it if you need to store this data somewhere.

We are online ticketing company and selling tickets for different event hosts
As it is a risky business, stripe wants to hold 15% till the event is over and credit that amount back to us
Stripe wanted us to pass the event date as fulfillment date on our transactions
Make sense?

Hmm yeah I'm not sure -- like I said we don't really have a fulfillment_date parameter in our API so not sure what whomever you were talking to meant. I'd follow up for clarification on whatever thread you were discussing this previously.
