I've been looking there for a while, but just to clarify, does that mean we still get the paymentIntent.status = succeeded after a payment or would be it in PROCESSING ?

as it says it can take up to 2 days to process and clear from their bank

or to be more specific. do we wait to process the order or we can send the item straight away after payment

It will be processing until it moves to succeeded. You likely shouldn't be provisioning your product until payment actually succeeds, but that is up to you.
