Gotcha, if you want to assign a specific api_version to an endpoint then you can do that via the API
https://stripe.com/docs/api/webhook_endpoints/create#create_webhook_endpoint-api_version

and selected the accounts' default (since there's only default and latest)

interesting, since the dashboard makes me select a version for the webhook. cool, will try that route then
