Example - I am service provider and i want to charge person only £100 (sort off deposit) and then charge the rest when job is done.

But if they change their mind then i would like to release the money instead off doing full refund

As well i want to hold the money till job starts and if get's canceled then they will get their money bacl

Yeah, you can do the initial 100 as one transaction, then separately place a hold for the remaining amount: https://stripe.com/docs/payments/place-a-hold-on-a-payment-method
