So first, Stripe doesn't really support gift cards so you would have to build this yourself.

Due to that, overall this is really really difficult to deduct an amount from the total after tax

But stripe is being used by a lot of major websites and fee of them have this Gift cards.how do u think they were able to deduct it after taxes?

Mostly... how are they calculating tax

If they use Stripe Tax then it isn't really possible to calculate Tax then apply a discount
