We do check it. But sometimes users increase the quantity during checkout itself(since we have enabled quantity modification in checkout).

Yes. That is one way. Any hack or workaround to enable the item modification but still have real time check on inventory during the checkout session itself(just before payment step)?
This seems to be a common checkout use case. Bolt checkout provides a functionality for this. Hence was wondering if Stripe also provides something similar
