Quick follow-up: is there a way to set payment rules on the Stripe dashboard side of things? For example, if accounts only want to accept ACH for invoices over $X (i.e. they only want to pay ACH fees, not CC fees for a $10k invoice)

No that's not possible if you are using Direct Charges.

We're trying to decide whether it's possible to allow Stripe to handle which payment methods to display for the PaymentElement, or if we need to manage that on our end and use the payment_method_types option to manually override/specify what will be accepted, because it's not going to fly to have large customer invoices be charged via methods with high processing fees. Does that make sense?

The Connected Account would have to set up Radar rules themselves in this case
