or Uber/Lyft where you pay $30 for a ride, but there's a discount so they owe $10 extra dollar to the connected account so they want 2 transfers (one for your $30 and one for $10 to pull from their balance) all tied to the same transaction

Ok. so the transfer group could be the original order id? I had assumed that supplying a source transaction to the transfer object would allow you to track where the payment was coming from. I guess this is a more readable way to see track this.

source_transaction works but agian what if you're Amazon or Uber and want to cover a discount

Oh I think I see. The money for paying the discount is not coming from the transaction but the platforms account balance and therefore doesn't have a source transaction to link to.

Can you track transfer groups on the dashboard?

not sure, I rarely use the Dashboard, but should be quick to test on your end in Test mode
