Standard account dashboard is exactly what a typical stripe account dashboard is. Express accounts don't get access to the typical stripe account dashboard.

Instead they get access to express dashboard

You can't change the amount of the charge after the charge has succeeded. You can create a refund for the previous charge & create a new charge for the new price

The other option would be for you to place a hold for let's say $120 and capture either $100 or $105 depending on what item the customer ends up with

It depends. If you've stored the payment method for future use then they don't need to re-enter it
