We were planning to offer coupons for a subscription if they pay annually. If they pay monthly, it's full price

Gotcha. In that case you can have two different products so that you can limit the use of coupon to just one product (yearly)

Great. And by doing so, are there any scenarios where someone might end up with a subscription to both products accidentally?

They could but you can disable signing up for new subscriptions on the customer portal & check if they already have a subscription before you call the create subscriptions API
