Generally those detailed are managed by the user/Stripe account. They are collected during the hosted onboarding of the accounts.

Great, thanks! So Essentially, the workflow would look like : I get basic merchant info, create their stripe account, grab the account link from the api and send them to the link to add in their bank details?

Sure, you can create and onboard accounts in test mode (just use your test API key). We have test data you can use to onboard accounts in various states: https://stripe.com/docs/connect/testing
