rolling the key is something which is pretty straightforward. I can check if you've rolled the key. But this bit Make sure to use the latest API key in your application. - this is the most important bit and isn't something that I can help with

you have two keys, i don't know how your application works, but the ones that you want to copy are the Publishable key that doesn't have Expires in 7 days at the bottom, and the Secret key

That's up to you. I don't know what application you have that may be using that key. If i were you i would wait to make sure everything is working fine (and isn't using that expires in 7 days key) before deleting it
you already rolled the publishable key before, that's why you have a new Publishable key. Why do you want to roll it again?
yes i want to use that non-expiring key but the shopify i use doesn't see where i can enter the key
