What I'm wondering is if there's a way to log product purchases on Stripe even though they were not made through PaymentLinks but were rather 'simulated' as purchased using Transfers?
Nope, if you are managing product purchase from your integration Stripe has no idea what prices you are using in your PaymentIntent, because at the ends metadata can have any value your integration may need
