I have, but couldn't find where to do this via the dashboard. The description parameter can be edited via API (https://stripe.com/docs/api/payment_intents/create#create_payment_intent-description) but I'd like to be able to edit via the dashboard

Can I make the email address associated with the product be from a different Stripe user?

E.g. one stripe user is Tarzan@discord.com... so can I make Tarzan@discord.com be the email address associated with the Stripe product (instead of the main Admin email address)?

no you can't specify the email by product
