Yeah, for similar things we have historically recommended collecting that info before creating the checkout session though I do get that that isn't as great an experience

Yes, as far as I can tell we don't support validation of those fields at the moment. I will create (or more likely add to) a feature request for this, but in the meantime you would need to validate this info yourself. So either before or after the payment

Oh or you could make your own custom Checkout page as Elements, though I understand that that is very different from just creating checkout sessions and redirecting

i’m charging users one-time via the checkout session. will these charges show up as “invoices” for them under the customer portal or no? i’m wondering if there’s a direct way to show charges the user has paid via their email
