@tough smelt that's mostly because you're using a "legacy integration" via the old Card objects.
If you set invoice_settings[default_payment_method] that is what will be used for Invoices and Subscriptions.

Thank you, to confirm default_card and default_source are still there but will be ignored if invoice_settings[default_payment_method] is present. correct?

correct. Mostly those are historical and set to the first legacy Card object you add
