so what approach should I take? build my own UI and use the stripe subscription API as per my use case?

unfortunately yes that's the only way if you want to do something like this. We also don't really support setting billing_cycle_anchor in the future on an existing subscription so you'll have to calculate all of the proration yourself or use the SubscriptionSchedule API.
