A client pays for his adventure, this goes to my host minus a commission to stripe and one to me, what I want is to charge him more commission directly to his account if he cancels.

Okay so when you create a Charge using Strip Connect you specify the application_fee, that's your comission.

Once the charge goes through you cannot change that application_fee
