I'm not sure what you mean

I'm looking under products and I have it set to client chooses what to pay

When I try to edit the product it says statement descriptor or unit label but that doesn't seem like an option where a client can enter information

When I set up the product initially I saw it say add field and the client could enter info but I didn't think I needed it until now

You can do this when creating the link here:

Click the 3 dots on the far right side of the payment link in the dashboard and click "edit"

You should be able to add it there

You're editing the product not the payment link

Go to the payment link section of your dashboard

lastly I don't just want to deactivate a link I want to completely delete it how do i do that?

You can't. Only deactivating is an option
