In the following images you can see how in the json that can be consulted in Stripe the email of the customer who has been refounded does appear, but nevertheless in Zapier the field always arrives empty (as null).
Can you tell me why and help to capture in Zapier the email of the customer who has received a refound.
This issue only occurs with refounds and never with payments

Unfortunately Zapier is a 3rd party solution and I can't offer any help about their product. It's not code we control so I can't review it.
But @boreal rock why is information missing only when a refound occurs and not a payment?
Is it a Zapier or Stripe problem?
Do you have a Payment Intent and Refund ID I can review? Ultimately I can't say

There's nothing special or different here. The Refund object does not include the Customer but Zapier could extract that from the related Charge object.
So there isn't anything wrong with how Stripe is responding
