Where are you seeing this "customer" field or info? If this is in Woocommerce's system it will be best to reach out to their support. We don't develop their integration so we don't have info on what they choose to display in their system

ok.... when a payment is made using a normal strike integration, there is a column that has the customer's name IN STRIPES DASHBOARD...... when I use stripe connect, and send out comissions, ....are those listed differently?
is is a list of individual transacttions?

Depends on whether Woocommerce's integration copies the customer object down to the connected accounts.
This is getting in to the territory of things to discuss with Woo, they will know more about what information their integration passes to what accounts
