Yeah that's fair. I guess the Stripe side question is--- can I add Tax to a Subscription cost without using Stripes built in Tax tool?

Yes, you could add your own line item for tax if you want to calculate it on your end, for example.

There are also Tax Rates, which isn't the same as Stripe Tax: https://stripe.com/docs/billing/taxes/tax-rates

Ahh okay. So it's not a dedicated field... more just another line "item" that would hold the pre-determined tax amount?

Stripe Tax is recommended though, as it's the easiest solution for calculating tax on Subscriptions.
