Yes we will be using Stripe with Quaderno on our website. But I couldn't find any info on how to set it up for calculating taxes when creating invoices in Stripe dashboard.

If you're using Quaderno you would need to work with them. We can't tell you how their Stripe integration works, or what it does or does not support.
