From https://dashboard.stripe.com/test/logs/req_8enPj3x54zjwi2, the country is not set. When the country is not set, it will be default to your platform country which is FR in your case.

But the important thing that when the user go to onboarding process the home address country field has been disabled
So the user can not change the country
