But from what I can understand the recommended way is to use account links right?

So, I don't know about all internal restrictions about changing the countries for existing Stripe accounts and Connect.
I would suggest you contact Stripe Support for this, they will be able to explain in detail how this works. If it ends up being a technical problem, we will pick up the support ticket from them.

why would the oauth onboarding work in comparison to the current implementation?
