This is not something that is controllable via Stripe, but is determined via your MCC. From Apple: https://register.apple.com/tap-to-pay-on-iphone/faq#:~:text=The icon for your business is set by the the merchant category code the payment service provider assigns to you. If the icon does not match your business category%2C talk to your payment service provider
