Hi I asked about this yesterday.

So we've reached out to Stripe Customer Support and they suggested we can turn off Stripe Tax by setting automatic_tax: { enabled: false } when creating a checkout session, invoice, or subscription. However we don't use any of these features. We only use Stripe to process payment via PaymentIntent

Automatic Tax does not work with just PaymentIntents. Or do you see a different behaviour?

I see tax added to automatically to a test payment

It's a tax for Stripe services, not for your product.
