You can activate automatic tax but that still requires that the products created are a taxable category.

right, we do have a default tax category set up but it doesn't seem to carry over to these one-off products being created

unfortunately zoho forms doesn't give me access into what exactly they're using - they've built a ui over it that doesn't exactly explain everything. It seems to me that each time a payment is made it creates a one-off product whose only attribute is the price (determined in the form) and is immediately archived
