You can set a Statement Descriptor if you are creating manual payouts: https://stripe.com/docs/api/payouts/create#create_payout-statement_descriptor

Though this isn't necessarily reliable as we call out in the docs there

Oftentimes banks won't show this data

We don't have the ability for further customization though of the Payout descriptor
