How long does it usually take for the funds to be paid out? The initial one took 7 days and second another 7 days why is that?

Depending on the country you are in, there might be accelerated payout speed in Europe and Canada which the funds will be available within 3 business days: https://stripe.com/docs/payouts#accelerated-payout-speeds-in-europe-and-canada

Some countries such as Singapore, Canada, the United Kingdom, and the United States also offer Instant Payout: https://stripe.com/docs/payouts/instant-payouts

I'd recommend checking with Stripe Support https://support.stripe.com/contact about whether there is any accelerated payout speed in Australia
