You can't, that's not possible.

You can add metadata to the product, though, which is visible in the dashboard and won't be shown anywhere in Checkout

yeah but that's unfortunately not visible when editing products in a subscription

For that then you might need to build a custom UI for your team to use which consumes that metadata as you need it, but what you're asking isn't currently possible
