When you create Payment Element, you can set the option to disable Google Pay with wallet.googlePay: 'never': https://stripe.com/docs/js/elements_object/create_payment_element#payment_element_create-options-wallets-googlePay

Ok ! That's exactly what I was looking for. I had not considered that Google an Apple pay were not payment_methods but wallets.
