After a Checkout Session is created, amount and currency can't be updated

You can only expire the Checkout Session and create a new one

Once that session is expired, the link for payment won't work right?

The user will receive a link for payment in their mail and I need to disable that as well

Once the Checkout Session is expired, the link can't be accessed anymore. You should send the new link to the customer
