we are getting spam money and stripe support is saying if you can not do that we will block you

I guess you could create the captcha on your own page, and only once user pass it you create the Checkout Session.

okay what if i open the checkout page and i will try lot's of card and csv's and will hit with fake cards again and again then it will create lot's of requests on stripe side?

Checkout Session is built by Stripe, so it already has security measures in place.
