So yeah your option here would be to instead change to allowing for switching to different Prices (https://stripe.com/docs/api/customer_portal/configurations/create#create_portal_configuration-features-subscription_update-default_allowed_updates)
This is good feedback though where we could provide a min and max here for quantity

No you can't really do that. You can select the options via the config for which Prices can be updated for that Customer.
So you may want to split your Prices up a bit more here with Prices equal to the quantity you want to provide
That would be the only real workaround right now
