Do you have any processes in place to account for this or other tips on how to handle it?
Our recommendation is, like you said, to take a cut that covers all the fees and all your business cost. The Stripe fees can be variable (depending on the country and the payment method), so make sure to take that into account.

But no it's not really possible to know in advance the Stripe fees you will need to day for each PaymentIntent.

One option is to you use capture_method: manual for the PaymentIntent https://stripe.com/docs/api/payment_intents/create#create_payment_intent-capture_method
And when you do capture the funds, change the application_fee depending on the payment method used.

Thanks, soma.
Is there information on the intent that shows some of these variables at the point of a succeeded event is triggered?
Like, if the card is none European (British or international)?

If I knew this I could at least start to account for the potential added percentage for the card country?
As well as check if the payment intents currency differs from my platform, and so make the assumption that a conversion fee will be added?
