You configure which Payment Methods appear in a couple different ways. Once they are enabled in your Dashboard here --> https://dashboard.stripe.com/settings/connect/payment_methods you can show all of them using Automatic Payment Methods (https://stripe.com/docs/connect/automatic-payment-methods) which show all applicable Payment Methods that you've enabled.

but only on android/ios, any reason why google pay wouldn't appear on chrome?

You have to make sure that Chrome has a valid Google Pay payment method attached to it
