Hello! Stripe no longer has a recommended Plaid integration. Invoices do support payments via bank accounts though, like ACH.

I'm trying to build a gateway for customers to be able to pay with their bank accounts aside from Stripe

You can do that without Plaid. Have a look at our general ACH guide here: https://stripe.com/docs/payments/ach-debit

Yes, you should be able to create an Invoice and set it to accept ACH from the Dashboard, then have your customer pay on our hosted Invoice payment page.
