You can set the statement descriptor on the Product, https://stripe.com/docs/api/products/create#create_product-statement_descriptor. However, I'm unsure if there is a second layer to your question.

If I set it on the product, when the subscription starts, will the statement descriptor be attached to the subscription?

When a subscription is created you can set the statement descriptor but it sounds like you can't for scheduled-subscription. Can you confirm this?
