You can manually trigger the receipt email from the Dashboard payment page

Yep, receipt_email is the parameter to use: https://stripe.com/docs/receipts#automatically-send-receipts-when-payments-are-successful

Just ensure you have the payments email toggled here, too: https://dashboard.stripe.com/settings/emails
