I know I can add info by including it in the metadata but AFAIK the metadata must be set before the email is entered with payment info. 😕

correct, that won't really work. I'm sorry I don't think there's any way to configure this. You might want to talk to our support team and flag this as a feature request: https://support.stripe.com/contact
