Stripe offers two types of Tax:

  • Tax rate: manually created by you
  • Stripe Tax: Stripe compute tax automatically for you

Which one do you intend to use? Could you also share the Checkout Session that doesn't work in your intended scenario?

I have a look at the your payment link of this Checkout Session. The tax settings are correct.

As the Tax settings in your dashboard is registered in Australia and New Zealand, I'm not too sure how Tax in Australia works. It might be that tax is only required for customer with specific billing country.
