Yeah that's the part that confuses me, I only set that metadata in this one charge update request but the previous_attributes in the following charge.updated event doesn't reflect that it had absolutely no value before

yep it's likely a bug

I've seen it happen before and unfortunately it can be quite hard to debug and get prioritised to be looked at, but it is worth writing to https://support.stripe.com/?contact=true to raise the issue if it impacts you, as the design of the API is that you should have something in previous_attributes
