What do you mean exactly by "customers can choose their store"?

its a multistore click and collect platform yes, customer can choose their click and collect store and then place an order. I implement a way to store the keys of a given store. But i dunno how to alter the order process to ensure that the correct keys are in used.
to be clear, i installed the stripe Gateway but i only got fields to specify keys for one store

Yes ! i'm using it, and i try to alter the behavior of this gateway to change the keys on the fly during the order process
but maybe there is another way
Should i send all the money to only one account and then send the money back to the stores after ?

Yeah you want to set up a Connect Platform here to be able to transfer the funds to the correct Connected Account based on the selected store
Have you looked at any docs on Connect yet?

I'm not very familiar with the WooCommerce plugin but you could also look at if they support a Connect platform via their plugin

sorry my questions, but what is the difference between creating a connect platform and add multiple stores in the same account ?
