I looked in my .env and I checked the webhook in the Stripe admin panel

Did you tried this :
https://stripe.com/docs/webhooks/signatures#verify-manually in order to try validating manually the signature of an event for example ?

i was in test mode and forgot to switch my sigs 🤦
