Ok, I was able to confirm that these are working as expected. Apple Pat and Google Pay have different requirements. You should not pass https://stripe.com/docs/js/payment_request/create#stripe_payment_request-options-shippingOptions if you're not setting requestShipping to true in this case, https://stripe.com/docs/js/payment_request/create#stripe_payment_request-options-requestShipping.
