sure, it would be possible to model that using our Subscriptions APIs I believe.

But it would not always be the same price

Subscriptions are more for the same recurring price

What I want is that depending on how much you have used the application I calculate a price and you are charged that price, one month could be $100 another month $500 etc etc

you can do that

for example you can add an ad-hoc amount at any time during the month and that gets charged in the next invoice https://stripe.com/docs/billing/invoices/subscription#adding-upcoming-invoice-items

so for example you might have a $0 fixed plan and just ad-hoc add items
