you can't use the Payment Element to edit existing card information. You can use it to collect new Card info

you can edit the default configurations via the Dashboard : https://dashboard.stripe.com/test/settings/billing/portal

i just tried and i can turn off Subscription Updates and only allow PaymentMethod updates in that page
