Stripe does not support P2P payments.
Something like this is only possible with Stripe Connect, however each party needs to have Stripe Account: https://stripe.com/en-de/connect

Our APIs don't support "escrow" usecase out of the box. So we can't really answer specific questions around it.
My colleague linked docs regarding Stripe Connect which might allow you to build an integration that can be used for this.
However, you'll need to think about the edge cases and all on your own.

The amount doesn't really matter here.

I get that out of the box it doesnt support escrow but stripe connect does support escrow correct?

I only found this in the docs:

"Escrow has a precise legal definition and Stripe doesn’t support escrow accounts. However, Stripe does provide escrow-like behavior through manual payouts. This gives you influence over payout timing, with the ability to delay payouts to Express and Custom accounts for up to 90 days; though, for the US, the delay can be up to 2 years.

Manual payouts can be used as an alternative to escrow when there may be a risk of a delayed delivery, or if there’s the possibility of a refund being needed."

lets say I delay a payment

can I redefine the account the payment is delayed to?

like I dont know yet to whom I will send this money

so I send it to me and delay it (so its not in my account)

or do I even need to send it to me can I just delay a transaction that has no destination yet?

and then before 90 days I can decide on the destination and send it out by sending the user that should receive the funds via stripe connect the instructions
